Soup doubles and freezes well.

This Jambalaya is lower on fat and sodium than most others. Due to an oversight, I had not added the tomatoes to the recipe. This has been corrected. The tomatoes used are petite diced with no added salt. If you use other than this you will need to account for the extra sodium.

This soup isn't for the squimish when it comes to fat content...I'm a borderline Primal who believes in the importance of healthy animal fats (only from organically raised animals) and the use of skin, bones and organ meats in dishes...this soup is really one of the best you'll ever taste! I'm also a believer in "slow food"...it usually takes me 5 hours to make this soup, but it's so worth it!
