This is one of Hungary's well known and beloved dishes. It traditionally uses bacon drippings and whole cut-up chicken with skin. I also now use yogurt as a thickener for the sauce instead of the traditional roux. I have "lightened" it as best I can without loosing the flavour. It is usually served with dumplings called "Galuska", recipe follows, but I would recommend brown rice or whole grain pasta, rye bread and a lettuce salad (recipe also follows) . These come out very moist. I found this on the back of a grocery store ad and made a few changes. The original called for 2 tsp of Thyme, 1/4 c of Parmesan, & 2 c of cornflakes. I measured after I dipped and found I had a good 1/2 c of mixture left so I cut the recipe back accordingly. My favorite dish at a local Mexican restaurant is their Chicken Enchiladas with Creamy Green Chile Sauce. I had to try and find a way to lower the fat and sodium so I could enjoy these without the guilt! I tweaked that recipe a bit to lower the sodium and fat, and came up with a winner!
