low fat zucchini bread

This zucchini bread is made with part applesauce for the shortening to make it lower fat. To make it even healthier, try any or all of these substitutions: use 1/2 whole wheat flour, use 1/2 cup molasses in place of 1/2 cup of the brown sugar. This gives it a very hearty, rich taste if you like the taste of molasses. Of course, you can also use egg beater instead of whole egg. This recipe is altered from my late Grandmother's recipe, and our whole family enjoys this lower fat version.
