To me, Greek food is both heavenly and earthy at the same time. What Greek garden doesn't contain zucchini & tomatoes in the summer time? Answer : NONE.

Created along the lines of braised lamb shanks in tomato sauce, this little recipe is a one pot summer time meal delight likely to become a favorite of yours too.

My friend brought delicious zucchini bread to a potluck and I asked for the recipe. I tweaked the recipe a bit, making it a TINY bit healthier by using half regular flour, half whole wheat (both unenriched and unbleached) and by replacing the vegetable oil with applesauce. It still tastes PHENOMENAL! This makes 2 8x4 loaves. Cut it in half and you get 1!
