Peel potato's, cook until tender, mashed and add ingredients. Butter a dished to fit them, add the mashed potatoes, Put them into the oven at 350 for 30 minutes. These can be done ahead, you can freeze them, thaw them and bake.

Make as many of these sandwiches as you can on a day off. Wrap sandwiches individually however you like, and freeze them. Put in your bag on your way to work, pop in the microwave for 30 seconds or until hot, and voila! You can also add cooked egg whites, but be sure to add the calories to the total.

Weigh & Measure everything for correct portion control. Can keep in refrigerator most of the week, or freeze, or prepare with a "Do Ahead" recipe. Need scales & measuring cup & spoons.
My experience: 16 oz box/dry will make 8 [4 oz] servings. Some might make more servings. So weigh it.
