Everyone's taste in Italian sauce varies. It is truly a personal choice how much seasoning you use. I recommend beginning with 1 heaping tablespoon of each seasoning, and tasting, and adding more of what you feel is missing. Bay leaves should only be used for long term simmering, but this recipe is good for in a hurry too. Sugar is used to decrease acidity of tomatoes, and is also to taste.
