I got this recipe from the latest issue of Clean Eating Magazine and it's super easy delicious and the ingredients are pretty basic. The results are impressive and YUMMY!

We have cooked this also with porkchops. This is rather a mild tasting recipe so if you like things more spicy you may want to use more mustard, grind fresh peppercorns etc... although for serving kids it's just the right taste!

Adapted from recipes by MOPSIE2002 (Dijon Beef Stroganoff) and SUDDENSTORM (Healing Stroganoff). Mostly I needed to re-configure it using the ingredients I use regularly to get an accurate calorie count.

Serve over noodles or rice (not calculated).

BULK recipe for tomato sauce that has a veggie of all the colors and then some but that even kids and non veggie people will eat. works great in all things you would a prepared tomato sauce for and freezes well.

From HAWGWILD1's recipe but calculated w/o pasta. Used fat free milk, and increased Curry powder to 1 Tbsp.

In hubby's family, curry chicken was made and then served over rice, with a variety of small bowls on the table for topping (i.e. chopped dates, raisins, almonds, and coconut). It's a fun family dinner that can be customized to suit your taste - and friendly to the non-dieters' in the family.
