Adapted from Oxygen Magazine. Also, I buy precooked, chopped spinach that is frozen in small 20 gram cubes in d stored in a resealable bag. It's really convenient when you don't need a whole package of frozen spinach.

This was adapted from a recipe by CTCLOUGH "Oatmeal Pancakes" used fat free milk and two egg whites instead. Added cinnamon and vanilla extract.

Don't know if this is truly vegetarian but there was no other category to fit it into.

My revisions: upped amount of dates; 1/4 tsp each of ground cinnamon and nutmeg; removed egg; added applesauce; and changed portion size to MINI muffins.

Substitution: you could switch out the dates for raisins. Would also work with pecans or walnuts.

The serving size is 2 pancakes. The recipe should make about 16 medium sized pancakes. I made acouple of small changes by swapping th egg for egg whites and adding a little agave for sweetness.

Revised from HAWGWILD1 recipe.

I personally prefer these heavier nutty pancakes with pecans so have calculated them with it. However, you can use blueberries, bananas, apples, walnuts or smear a bit of peanut butter on top and take it to go (all of these are not calculated in recipe).

For topping, try Maple Syrup (like it warmed over the stove with the fruit i.e. banana), honey, agave, or confectioner's sugar.

For kids who are picky (and don't like "clean") try sprinkling a FEW chocolate chips in their pancake while the batter is sitting in the skillet. This generally convinces my picky eater to eat them!

Pancakes are approx. 4" in diameter. If you make them larger you will need to re-figure the calories.
