I wasn't sure if I'd like this without the non dairy creamer (just don't care for it) that most recipes call for, but I thought that I'd tweak a recipe and found that I do! Very versatile and puts you in complete control of the sodium level. Use as a thin or medium white sauce, or substitute for a can of cream soup in recipes. This would make about 4 "cans" of soup, so I based the servings on 4 servings for each can...not an easy recipe to figure servings for. Rich and chocolately without the trans fat from non-dairy creamer! I added the vanilla pudding mix just to see how it would be and was pleasantly surprised with the results (the Great Value instant vanilla pudding also has no trans fat) It seems to be the "secret" ingredient that gives this mix it's richness! These are the best pancakes that I've found! It was my MIL's recipe that I improvised a bit. You can use ground flax or wheat germ in place of the oatmeal, cornmeal or bran if you'd like. Don't substitue the buttermilk...seems to be what really makes them light and flavorful. We make them quite big, using about 1/2 c. mix for each pancake.
