I don't eat any kind of flour or refined sugars, so finding a recipe for a tasty muffin, with a good consistency/texture, was nearly impossible. I finally made up my own using No Flour, No Sugar, No Oil and the result was a heavenly Oatmeal Blueberry Muffin! Enjoy!!

This is for 6 Thin pizza Crust! You can also make this and divide the dough in half and you will have a thicker crust. Put you add the calories back in!

Ines' Banana Nut Bread, or Muffins

Adapted Ines' favorite Banana Bread recipe by changing 2 eggs to 4 egg whites; and changing the sugar to Splenda; and changing out 1 cup of white flour to whole wheat flour. Ines always baked in her bunt cake pan. I used muffin pans and made 24 servings for portion control This recipe might have originated with the Purdue Extension office.
One muffin is about 20 grams of Carbohydrates = one diabetic carb.
