I got the basic recipe from Dierberg's and used my own approximations based on the order of ingredients. My friends and family love it! This version makes 4 cups or 8 servings of 1/2 cup each. You can eat it warm also and it tastes like a loaded baked potato!

Gazpacho is one of my favorite summer meals, and it's no coincidence that it's also one of the easiest to make. It's simply a chilled, usually blended vegetable soup of Spanish origin.
