This is like Tabouli, with extra-nutritious add-ins like edamame, dried cranberries, and almonds. Lots of superfoods here!

Zaalouk is a Moroccan eggplant and tomato salad that incorporates a large amount of garlic and fresh herbs. It's best made in the height of Summer when the tomatoes are in their prime, and can be served warm or cold - I prefer it warm and mixed with chickpeas.

This is a great dairy free side dish or main course!
The preparation of the lentils is the longest step: they need to sit for 1 hour after boiling. This is an EASY recipe! It freezes wonderfully and the taste improves over time.
