This recipe is really easy; it's really more of a process than a recipe. Rice paper wrappers, which are available in the ethnic sections of most larger supermarkets these days, are a great way to wrap your veggies and protein for a quick snack or light lunch.

Easy Summer Rolls make a refreshing summer appetizer or snack - or light dinner. Serve with sweet and spicy dipping sauce (not included). They take a little prep, but are easy to assemble.

Use leftover rice or pre-cook the rice and allow to cool. I also tend to use left over pork or pre-cook the pork before making the fried rice, allowing it to cool. Cook the mixed vegetables and drain of water.
