Cookbook creator says: We loved this one! I added bok choy and would do that again. This has become our favorite soup! I used Costco's precooked bacon, way less fat and calories (and sodium) than regular bacon but still get the flavour, I used 'no salt added' broth and low sodium stewed tomatoes also.

Creamy, somewhat spicy, wonderfully thick cauliflower soup, enhanced with just enough ricotta to make it delicious. The sodium reading in the nutritional content is absurdly high and likely wrong. It will depend on what broth you use.

Slow Cooker Chicken Tortilla Soup

This is an adaptation of my favorite chicken tortilla soup recipe. If you have the calories to spare, make some tortilla chips in the oven to eat with the soup and top with a bit of sour cream, cheese, avocado and anything else you like! It is very flavorful on it's own, though. Be sure to use high-quality enchilada sauce, as some brands can be greasy. I like to add other veggies in sometimes, such as carrots and squash.

May not sound appetising but it is a rich and strongly flavoured tomato soup, invented for a man with a cold (manflu) so it has medicinal properties and a high nutritional value :)
