This seems time consuming, but once you make it once it becomes a very simple quick dish. This is based on a SB recipe, but I changed it for my taste.

This soup is soooo good!! It is great soup if your doing low carb, low fat and low calorie!! Its also a good way to get a vegetable in :)

This is a healthier adaptation of a family recipe. It makes a lot, about 20 cups, but it does freeze well.

I usually serve it over rice, but it's yummy without, too.

Since the original recipe submitted by JOEKNEE had ingredients that were higher in carbs (i.e. fat free HH, carrots, turkey), I tweaked it and brought the carb count down some! Remember to calculate Net Carbs (subtract the fiber count from the total carbs) to get the true # of carbs.

A vegetable soup without the potatoes. This recipe made a large pot full that I froze in different size containers to use for dinner or individual lunches.

Make the meatballs several days in advance and freeze them. I prefer fresh basil, parsley, garlic, and fresh ground pepper for a more intense flavor. I also use sea salt (salt can be adjusted for taste and sodium restrictions).

Good crockpot meal for a cold day. Use whatever color bell peppers you like, I use yellow and orange. Ground beef is fine, but will add calories. Turkey cutlets can be subbed for the steak to reduce calories and fat. I use two kinds of meat to add flavor and texture.
