My hubby isn't a breakfast guy, but he will gladly consume a smoothie every morning. The secret is the frozen banana! Otherwise, I mix it up every day and simply follow the basic formula of one cup fresh fruit + 1/2 c. frozen fruit and 1/2 frozen banana + 1/2 c. liquid. The liquid can be fruit juice or milk or even yogurt. When that bunch of bananas on your counter is starting to look sad, peel 'em, break in half and stick in the freezer so the secret ingredient is always on hand!

Cookbook creator says: Equally good hot. Just leave out ice. Heat all together. Use a hand blender or small battery operated wisk to foam the top if available. This adds a real coffee house touch and is soooo good.

This recipe is scripture in the kitchen at my store - versitile, healthy, lightly sweet, very filling, and of course tasty. Here I've put the default version, Blueberry Walnut, but you can substitute the blueberries for any fruit your healthy heart desires, and the walnuts can be substituted for raisins, chocolate chips, dates, etc. etc.

My mom used to make this delicious version of French toast for breakfast when I was growing up as a great alternative for getting rid of overripe bananas. It makes regular French toast seem bland in comparison! This is excellent topped with a low calorie maple syrup or your favorite yogurt (I like strawberry). **Please note: I usually get my bread from a local bakery, so I did not include the bread in the nutrition values. I do, however, recommend using 100% whole wheat bread as it compliments this recipe wonderfully!
