This recipe was influenced by others I saw on the site. The main difference is this one uses toasted wheat germ. The toasted wheat germ coats the chicken enough to help it maintain its moisture without having a very heavy coating. As my son said, it doesn't even seem like the chicken has breading. I found this recipe on the back of the box of the Old El Paso Soft Taco Bake Kit. I altered the recipe by changing a few ingredients. It called for salsa, kidney beans, and Monterrey Jack cheese.
