My dad cooked these for me from leftovers and are now a favourite. I modified this recipe using one egg. I modified it a 3rd time using kale and cooking in olive oil or coconut oil. Calorie tracker is using olive oil.

This chicken salad is so tasty and high in protein. I take this to work and come home with an empty bowl. Great on a bed of lettuce or if you have a few calories to spare, it is very good on a croissant roll.
