Cookbook creator says: I am so glad to find this recipe. I have been wanting Pineapple Upside Cake for a long time, but wouldn't let myself get or make one because it wasn't healthy. My mother-in-law used to use peaches instead of pineapple. It was delicious.

This is a cake originating in costa rica and nicaragua. Many people use it in mexico also. It isn't the best for you but is a great treat. It is very moist and is great with fruit on the top!
