converted a recipe for beer bread so i could use my 6er muffin tin! these are sooo good and so easy! you can add anything to the dry mix to vary it up: for example 1/4 cup cheese.

Grandma used to call it "Johnny Cake". "Corn bread," she said, "does not have sugar". Seems she grew up in Missouri, eating cornbread, but my grandpa grew up in northwestern Ohio, eating Johnny Cake. So she made Johnny Cake because that is what we all liked. But she never let us call it cornbread!

I adapted this recipe from a cooking light recipe to make it more healthy and now its actually much tastier than the original! Makes 8 one cup side servings (that is what the nutrition info is for) or 4 two cup main dish servings.

I loved Mom's Macaroni Salad, and I used to make it often. This is the same recipe, without the mayonnaise! Not only is it lower in calories, it still tastes great, and I don't have to worry about it sitting out for a while. Is really cute decorated with little quail eggs and a sprinkling of paprika.
Makes 8 1-cup servings.

I've created a healthy twist on gratin by combining some highly rated recipes from allrecipes with another gratin recipe from SparkPeople that didn't have enough detail in the recipe for me to follow/didn't look creamy enough/didn't want to use egg. First result is surprisingly v. tasty!

I love SP_Steph's Dolmas. Why she has it tagged as a fish dish gots me stumped.

This is another of those American Greek version dishes from St. Sophia's Greek Orthodox Church Festival. And what makes it so simple to make is no wrapping of the grape leaves. YES!!!

I wanted to make my own grape leaf rolls, but I accidentally tore the grape leaves while removing them from the jar. I chopped them and added them to the rice with some feta cheese a drizzle of olive oil... FABULOUS! And much easier than rolling leaves!
