I saw a similar potato salad at my local Korean grocery store in San DIego. They added crisp, fresh diced apple and diced carrots (slightly cooked). Delish!!

I used celery instead of cucumber.

I would omit cucumber next time.

Cider vinegar gives these carrots the flavor of an apple cider reduction, but in a fraction of the time. To get a head start, boil the carrots a day ahead. Refrigerate them in a zip-top plastic bag, then sauté just before serving.

I love this dressing becase it is simple and always fresh. The avocado gives me healthy monounsaturated fat, and the variety of spices and vinegar choices give me a thousand different combinations. Every salad is a new adventure.
