Cookbook creator says: use panko breadcrumbs. Slice the pepper instead of halving... and blanch for 2 min before stuffing. Spray tops with lots of cooking spray. I added a bit of cheddar inside. The chopped jalapeno was redundant. peppers were HOT ;) deseed. Some used nonfat plain yogurt as dip
