The texture of this comes out almost like mashed potatoes but not as smooth -- almost like grits. I serve it to guests and they always ask how I made homely old cauliflower taste so good!

This is a Better Homes & Gardens New Dieter's Cook Book, Meredith, 1st Ed., 1992, recipe on page 136. I modified the recipe here. I used 2 slices of a thin light multi-grain bread that have a total of 70 calories for both pieces, so I added a 1/4 c. more applesauce
