I made the baked version of these great vegies with steak on Christmas day. They are wonderful and versatile. Can be grilled or baked and use any combo of vegies desired. If made without potatos and with 6 C total of carrots, cauliflower and broccoli florets and red pepper, the calorie count is only 90 per serving.

This is from a recipe column in our local newspaper by Sue Doeden. Only change is that she uses mayo, Im using Miracle Whip light and I also changed out the sugar for Splenda.

This is a healthier version of chicken salad that my mom sometimes makes. The little bit of ranch gives it a nice flavor not found in a traditional chicken salad.
