One of the finest dishes ever to come out of the Silver Palate Cookbook, this chicken marbella is first marinated in oil, vinegar, capers, olives, prunes, and herbs, then baked with added brown sugar and white wine. While prunes and capers might seem like an odd combination, when cooked together with chicken they create a delectable sweet and sour, savory flavor. The original recipe calls for the chicken pieces to be marinated all night. We found that marinating for 5 hours worked fine.

When I first had this tuna grilled in spain with olive oil and salt I couldn't believe it was fish at all. This recipe is a bit of a cross between seared italian style and Spanish grilled.

great for your own variation! change/add veggies or the amount of chicken.
i made this from taking ideas from 2 other recipes.
very yummy. i used only 2 chicken breasts when i made it, because i have such a small slow cooker and there was ALOT of sauce, so you can add more chicken with out changing the amount of other ingredients. the nutrient info is for 3 chicken breasts, 5 servings. i served this over whole wheat pasta ( not included in the calculations) there is plenty of this with just 2 chicken breasts. might also go well over rice or egg noodles. you can also use a whole 8 oz of fat free or 1/3 fat cream cheese, i did half and half (as is the nutrition info)

Traditional mediterranean stir fry breakfast. Great for a weekend morning alternative to "sausage & eggs". It's not really an omelette because the eggs are optional & even if you do put them on, they are just "drizzled" over the top, not stirred in.

Serve it with chopped cucumbers, feta cheese & black olives. Dip into it with whole wheat pita bread.
Serve with tea (traditional mediterranean tea is similar to Orange Pekoe, served black, with sugar or sweetener, but no milk).

As a side, you can also take whole hot banana peppers or the long green chili peppers & roast them directly on the burner (med heat, no pan necessary - just watch them carefully). They will turn a bit black on the outside. Flip them over to cook evenly.

Variations on the melamen:
-Use with Hot Banana Peppers for a yummy "hot" variety
-Add mushrooms if you like them (I don't which is why I don't add them).
-Eliminate the egg, it is not a necessary ingredient (This makes it vegan friendly.)
-If you like eggs, then add 2 egg-whites instead of 1 whole egg for lower cholesterol version.
-This is SO YUMMY with butter (add 1-2 tbsp at the same time as the tomatoes), if you can afford the fat & cholesterol.

This tagine was inspired by several yummy versions I've had at the homes of friends of mine - friends from Morocco, Algeria, Tunisia, Egypt - everyone seems to have their own variant.

I cook this dish in a tagine (a special container - that one with the cone-shaped lid), but have also made it in a regular, large, sauce pan. I believe it would also work in a slow cooker, but haven't tried that.

I've used a whole chicken, cut up, but feel free to use only chicken breasts or thighs. Personally, I find that bone-in chicken is *way* more flavourful, but your mileage may vary.

Something I made for my spice-nut, vegan daughter. If you don't have all of the spices, you can easily substitute Mrs. Dash Southwest Chipotle Seasoning and add extra basil and cumin. Nice hearty winter stew. Add any other veggies you like. Don't like rice, add cooked diced sweet potatoes. Very versatile recips.
