There was a call out for a healthier version of falafel... well I tinkered with a recipe I had and came up with a whole-grain, baked version that's equally tasty! Leftover patties can be refrigerated for up to 2 days. To serve, cover with foil and bake for 10 minutes at 400F.Submitted by JO_JO_BA
This is a delicious and easy to make vegan treat. Slice it thinly to use in sandwiches, salads and as a pizza topping.
This recipe yields enough to make 2 sausages about 6 inches long and 3 inches in diameter.

These burgers are spiced to perfection. To make them even spicier, you could melt jalapeno soy cheese on each patty and serve topped with salsa.
This is a modified version of a recipe in my favorite vegan cookbook (La Dolce Vegan!) I'm not a big fan of the taste of kale by itself, but since it is so nutritious I did some experimenting, and found that it is delicious when minced in a tofu loaf =)

I had seen some vegan patty recipes on the web and adapted this one. It is pretty balanced with fat/carbs/protein. I love to eat one of these with a salad after working out. Wonderful Lebanese dish, fried in coconut oil instead of olive oil! This is a good appetizer, side dish, or even main dish. Even put it in sandwiches with fresh sliced tomatoes and/or cucumber and fresh hummus. Plain yogurt goes very well with this too!Submitted by MICHELEHEATH
