There was a call out for a healthier version of falafel... well I tinkered with a recipe I had and came up with a whole-grain, baked version that's equally tasty! Leftover patties can be refrigerated for up to 2 days. To serve, cover with foil and bake for 10 minutes at 400F.

This is a delicious and easy to make vegan treat. Slice it thinly to use in sandwiches, salads and as a pizza topping.
This recipe yields enough to make 2 sausages about 6 inches long and 3 inches in diameter.
I have calculated the nutritional info on the amount of thin slices both sausages will yield.

Baked Tofu Kale Loaf (vegan)

This is a modified version of a recipe in my favorite vegan cookbook (La Dolce Vegan!) I'm not a big fan of the taste of kale by itself, but since it is so nutritious I did some experimenting, and found that it is delicious when minced in a tofu loaf =)

Feel free to add or substitute ingredients with what you prefer or have on hand. This is so simple and delicious, you must try it!

Five Forks Up from DH! Sorry - they got gobbled up so fast I never got to take a photo.... I served these with sprouted grain toast. Not bacon or not sausage would make an excellent addition to this meal. Based on fatfreevegan recipe

I had seen some vegan patty recipes on the web and adapted this one. It is pretty balanced with fat/carbs/protein. I love to eat one of these with a salad after working out. They keep well in the fridge and re-heat well too. Delicious on a bun with vegenaise and trimmings.

Wonderful Lebanese dish, fried in coconut oil instead of olive oil! This is a good appetizer, side dish, or even main dish. Even put it in sandwiches with fresh sliced tomatoes and/or cucumber and fresh hummus. Plain yogurt goes very well with this too!
