Yummy, dense, almost vegan pancakes. Almost because they use honey. I bet you could omit it or sub agave and have a great vegan breakfast. Buckwheat has great protein and fiber, making these a healthy way to start the day. Nutritional info is PER PANCAKE, and this recipe usually makes 5 pancakes from 1/3 cup batter scoops. I also have made these with flax and water instead of banana, or you could use an egg.

I wanted to make a "syrup" for my waffles that was healthier. Yes, this has more calories, but a good source of fiber and healthy fats. You could use less chia seeds if wanted as they mostly are a thickener.
