A simple pancake that is easy to prepare and to cook
Galettes keep for at least a week in the fridge but wrap them in foil or clingfilm so they do not dry out. Can also be frozen.

Raw Buckwheat & Coconut Cereal (Raw, and Gluten Free)
Very Good 4.0/5
(2 ratings)

Great for days when you've only been eating raw fruit and veggies, and want to add some carbs, fat and protein. Enjoy with 1/4 a cup of your favorite nut milk, or half the portion to 1/8 of a cup and use as a crunchy topping for fruit!

It's incredibly filling though, so don't go overboard the first time!

Oat and Bean Waffles
Good 3.5/5
(2 ratings)

This recipe works great with any type of bean. Beans can be soaked overnight, the water drained and changed and the beans will last for approximately 10 days in the refrigerator. The soaked, yet uncooked beans, can also be frozen so they are ready to use another day. It takes about 1/2 cup of dried beans to make 1 cup of soaked beans.

Flaxseed Quick Muffin/Toast (Gluten Free/Low Carb)
Very Good 4.0/5
(3 ratings)

This is my go-to breakfast recipe. This recipe is gluten free and low carb/sugar. I like to slice the "muffin" horizontally into 4 thin "toasts" and top them with whipped cream cheese or Polaner Sugar Free w/Fiber Preserves.

Dukan Lemon Ricotta Galette
Very Good 4.0/5
(1 rating)

Oat bran is a key element in the Dukan diet. It can be challenging to find ways to make this stuff palatable. This light and easy pancake is a tasty way to eat your oat bran. Delicious, actually. Makes 2 galettes. You may cut the recipe in half for a single serving.

Healthy, Fruity Breakfast Hand Tarts
Very Good 4.2/5
(20 ratings)

Ditch the toaster pastry. They're loaded with sugar and fat--and not much else. My hand tarts are full of fruit, and if you make them ahead of time your kids can grab them and go.

Crepes without eggs! Could be vegan if plant protein powder is substituted for whey. Single crepe recipe. It has a nutty, hearty taste. Filled, I wouldn't want more than one. Multiply for more.

Variation on the Eades' recipe. I use 1 egg, 2 whites, greek yogurt and protein powderso it isn't vegan. This version is for one serving of about 3 crepes. Easily multiplied. This is just the crepes. Can be used for savoury or sweet filling.
