Gluten free Coconut flour recipes

Coconut flour: high fiber, protein; claims to reduce blood sugars. Good fats, also trans fats. Don't substitute coconut flour for wheat but 10% is OK as long as you add an equal amount of liquid. Gluten free and often dairy free recipes.

This is a lower carb recipe that is something like a shortbread, light and easy to cut. It can also be used as a pie crust base. Gluten free. I like is as a base for fruit pizza. I have not included any topping nutritional information.

One of my favourite coconut flour recipes to date. Gluten free and high fiber and protein so makes a nice snack or breakfast item. You could add raisins or dates but I have not calculated for that nutritionally. Very moist.
