Cookbook creator says: I tried this recipe as part of the Healthy Cooking Challenge. It is to die for. I took some of it into my office (gone in 30 minutes). Awesome in oatmeal (just like pie pumpkin, but so much healthier). I made two batches in about 35 minutes. Recipe is very easy to follow.Submitted by CHEF_MEG
