I was fascinated by the potato & spinach soup recipe, but we like to have chunky soups and want our spinach to taste fresh, so I adapted the recipe to add the spinach at the end and to top with a little Swiss cheese. Delicious and very filling, even without meat!
You can add 1 cup of diced chicken to this recipe, for extra protein.

This is a simple and quick chicken noodle soup, using the chicken breast pieces of a store-roasted chicken (I pull the breast pieces as soon as I get home to reserve for this soup).
The soup has some new flavors - I add fresh mushrooms to the soup, and serve with baby spinach leaves added to each bowl when serving. The spinach will wilt somewhat in the hot soup but not get soggy. Each bowl is topped with a sprinkle of Parmesan cheese to add to the richness
This is very filling!

You can make this with a fresh fryer chicken but it takes much more time. I use a grocery store roasted chicken, along with the juices to speed this process up.

Here's a zesty version of chicken tortilla soup that's both easy and delicious.
To make it better, homemade tortilla strips are used for the garnish, or even easier, use crumbled baked tortilla chips in place of the tortilla strips.
Serve with lime wedges and extra peppers for taste.

Easy slow-cooker soup that cooks overnight. This is spicy and nutritious, but most of all, delicious!

Though the amount of cayenne, jalapenos and other spices seems like a lot, they really mellow out in the soup and it won't be extremely hot - just the right amount! The soup thickens and the flavors really blend to a finely seasoned soup once pureed.

Yummy vegetable soup. This makes a large quantity of soup for several meals and/or freezing.. I like to make this and eat it throughout the week for lunches and snacks. Also, there is always plenty to share with a friend's/neighbor's family.
