To adapt this for vegetarians, just substitute a 16 ounce can of chickpeas (drained and rinsed) for the chicken and use vegetable broth to replace the chicken broth.

Since traditional orange chicken is breaded and deep fried, I just use the sauce as a stir fry sauce and add a bunch of our favorite vegetables.
If you want to add more than 1 lb. of vegetables, I would double the sauce recipe. Submitted by BUN3KIN
