This recipe was sent to me a long time ago by a Sparkfriend and I have changed it a bit - but even though I don't remember who sent it - I thank you!!
You cannot taste the cottage cheese and since it is wizzed hard at the start even the lumpy texture is gone!!
I served these with 1/2cup strawberry halves, 2 Tbs low fat unflavoured Greek Yogurt and 1 tsp honey drizzled over each plate - this added 50cal to the recipe. You could use any fruit - but remember to add it to your tracker.Submitted by EMMABE1
The first picture was taken just before serving.
The second picture was taken after overnight soaking in the fridge. It has absorbed the excess liquid and the fruits have plumped up and the flavours melded.
The third picture was taken after I had mixed the ingredients and before it had stood overnight. There is an amount of liquid - that will be absorbed as it stands overnight.
