I had a tasty Butternut squash soup at a fancy pants restaurant. After a few tries, I got it right and healthy! This was served in the restaurant with a drizzle of vanilla and ginger flavored cream and candied pecans. At home I eat it with warm crusty french bread. The original to this recipe was printed in the February, 2009 edition of "Living the Country Life" - I just upped the veggie and whole grain content. I find that it makes a dinner all by itself. A 3 1/2 to 4 quart crockpot is recommended.
