I have seen a lot of veggie burgers made with eggs and oats or bread crumbs. I actually don't think those things are necessary so I whipped up my own vegan version with as few ingredients as possible.

I made this to go with my Fast and Spicy Bean Soup and a salad for a nice outdoor dinner with the family. I adapted the recipe from the recipe "Totally Addictive Cornbread" by Chocolate-Covered Katie at http://chocolatecoveredkatie.com/2012/01/18/totally-addictive-cornbread/ so that it had less sugar, less fat, fewer calories and more spice.

This bread is great for people with gluten intolerance. (Check ingredients on packages to ensure they are gluten-free.) This dense bread goes well with jam or, oddly enough, cottege cheese.
