Spagetti Squash can be found at your farmer's market from fall into late winter. Easy to prepare, and fun to eat. A small spagetti squash 1.5 to 2 pounds is fine for full dinner serving for one person, a bit bigger 3 pounds or more to serve 2 people.

I serve cooked, pulled Spagetti Squash with my favorite Hearty Vegetarian Tomato Sauce that I often make to go with pasta. On Spagetti Squash you save big on those precious calories when dieting.

This recipe is a great way to introduce tofu to people who have never had it or claim to hate it. My family didn't even realize it wasn't just eggs. You may want to reduce the red pepper if you don't like spice. My little one said it was a bit spicy...but it was nothing he couldn't handle with the help of a little milk! To reduce the calories, you could use a different crust, like one made of rice or hashbrowns. I stuck with the flaky pie crust to give it a true quiche taste, since I was altering the filling. =)

This recipe has been healthy-fied from an older version that I've had for years. I've thrown the old less healthy version out the door!! WooHoo!

The wheat germ absorbes moisture so the sauce won't run right out when cutting. It also provides fiber. If you do not have wheat germ handy just replace it with one large egg.

Also, use whatever veggies you have on hand! This recipe will also be great with eggplant, zucchini, carrots, etc.

Enjoy! *Also freezes great (think convenience!)
