This is an adaptation of my favorite chicken tortilla soup recipe. If you have the calories to spare, make some tortilla chips in the oven to eat with the soup and top with a bit of sour cream, cheese, avocado and anything else you like! It is very flavorful on it's own, though. Be sure to use high-quality enchilada sauce, as some brands can be greasy. I like to add other veggies in sometimes, such as carrots and squash. Using low-fat milk instead of cream lowers the saturated fat content in this hearty summer soup.
This soup is very hearty. You could substitute the 1/2 and 1/2 for skim milk if desired. I used coconut oil for cooking the chicken, but if you poach them, you can take out that extra fat too.Submitted by KELLIEJOS
This recipe came from the chicken enchilada recipe I submitted earlier. I didn't need to make that many chicken enchiladas, so I made this up to make a slightly different meal. I used the remaining sauce from the chicken enchilada recipe, then added the remaining chicken and added the chicken broth. Submitted by SKEYDOO
