It's a more sweet and sour recipe with little surprise burst of raisins that plump in the sauce as it cooks. You can bake them, but I like the stove-top method here. Not a big fan of raisins? You can leave them out, or substitute with another fruit, like apple or pear.

A little bit of extra labor in cooking the taco shells twice is well worth the effort. The shells that taste just like you fried them. Watch the time though, they overcook easily.

For a western version, my Mom added 2 tbsp. chili powder and a dash of Cayenne. If I have fresh rosemary and oregano, I would omit the Italian seasoning and add a teaspoon of each instead.

When I am missing my favorite take-out "Super Fries" from the drive through in San Diego, I make my healthier version with barbecued chicken instead of beef. You can reduce the fat by omitting the avocado.
