This is a light version of what would normally be considered a diet no-no - creamy potato soup. Along with a salad, you could easily have a sinfully decadent dinner for under 500 calories.

This is a low sodium makeover of the Paula Deen Taco Soup recipe. One of my favorite quick dinner recipes and only 240 mg of sodium per cup.

This is just basic vegetable soup. It's amenable to whatever veggies you happen to have around, and is great for using up leftover vegetables.

I did the nutrition calculation for 1 cup of soup; eat as much as you want. :-)

Most people will, I think, want extra salt in this, but I like the flavor, and I'm trying to cut down on sodium.
