Sweet Potato muffins!

Heres a little recipe I worked out, and Sweet Potatoes are full of vitamin A! These sweet potato or yam muffins have less than 100 calories each and less than a half a gram of fat each! They come out to just under 1 gram of sugar each, but i use no sugar in them so these are naturally occuring. By the way no these are not "mini-muffins"! Feel free to use regular muffins tins like I did... They are a great harmless snack or breakfast addition. To get your vitamin A be sure to pair it with a healthy dietary fat (we need fat to absorb the A) - breakfast with 1 ounce of reduced fat cheese and a piece of fruit is great! So low cal you can mix and match often- and made with whole wheat flour- so you are getting your healthy whole grains and their awesome antioxidants! Enjoy!
*Don't be scared of the prep time- its just for boiling sweet potatoes. I forgot to add the temperature before but I included it now: 425 F. (its in the recipe text now too) Let them cool completely! Even chilled in the fridge helps them to "set".

This is a great emergency snack. I measure out 20 cupcake portions and end up with 22 calories and 2 carbs per serving. They set up nicely. They freeze nicely. They taste great

I love cheesecake so I took several recipes and came up with this version. It is dense and tastes great, even my sons liked it. Yummy alone or with raspberries on top. Sugar free and low cal/fat. Makes 16 servings.

A slightly modified version of a tried and true recipe that is liked by all. I've made this full sugar several times and get as good or better raves using this reduced sugar recipe.

These taste awesome, I promise, just don't tell anyone what is in them until after they eat one. Print out the nutrional stats because everyone can eat these brownies. Bake up a bunch and be a hit at the company potluck or holiday party.

Print up a bunch of recipe cards because you'll need them when your friends ask for the recipe.

I've been trying to create the perfect cornbread. I think I'm almost there! The whole wheat flour gives it a nice density but with just enough cornmeal to create the perfect crumbly texture. My ultra-picky boyfriend downed four pieces of this at dinner! The recipe is very simple; I whipped it up in about 10 minutes.

Don't have any buttermilk around? Simply add a tablespoon of lemon juice to 1 cup of milk, wait 5 minutes and use. You can also easily substitute an egg for eggbeaters, butter for margarine, or sugar for Ideal if that's all you have around. Just be sure to adjust the calories accordingly. Enjoy! I don't eat any kind of flour or refined sugars, so finding a recipe for a tasty muffin, with a good consistency/texture, was nearly impossible. I finally made up my own using No Flour, No Sugar, No Oil and the result was a heavenly Oatmeal Blueberry Muffin! Enjoy!!
