A simple, delicious pasta that uses the absorption method (similar to risotto). The starch on the pasta makes a wonderfully creamy sauce. This can be make as directed, or left on the stove a bit longer to carmelize.

Meat eaters love the steaklike texture of these mushrooms. If smoked mozzarella tastes too strong, feel free to substitute a milder cheese in its place.

I kind of threw these together one night and they were so good my roommates request them at least once a week! The recipe leaves plenty of room for interpretation. The Nutritional Info might not be 100% accurate because there is no way to enter an entire portabella mushroom into the recipe calculator and I'm not entirely sure how much 100 grams is.

This is a great side dish that's absolutely packed with protein, vitamin A, vitamin C, and folate. It's a little high in fat content, but low in calories and well worth it for the nutrients.
