These are delicious muffins that my whole family loves. I use freshly milled whole wheat flour. You can easily substitute canned pumpkin or mashed, ripe bananas for the fresh apples and have a whole new recipe. I've also used blueberries and cherries and played around with different spices and flavorings.

Cookbook creator says: Notes from a commenter: The best way was this: CARROT cake mix, a can of pumpkin, 1/4 cup of applesauce and 1/4 cup of water. After several trials, that was the easiest and tastiest method.

These moist pancakes are lightly spiced for the palate of my young child. If you like a bit more pizzazz, you can increase the spices or add others. Cinnamon and pumpkin pie spice both work nicely here.
