High in protein and fiber, low fat and fairly low in sodium, not to mention lots of fruit, these muffins are a great way to start the day! Whole wheat four can be substituted for the bean flour, just omit the gluten and xanthan gum, canola oil works as well as olive oil, and maple syrup or honey can substitute for the agave nectar, but some values will change a little.

They are much less sweet than traditional muffins, more like a bread, and the olive oil flavor is pronounced.
