I needed an easy breakfast to take to work and heat quickly, so I made this simple, tasty egg casserole. You can add spinach, mushrooms or whatever your preferance is to it. (I also make my own italian seasoning. Equal parts of basil, oregano, thyme, marjoram, rosemary and sage...ground in a food processor to desired consistency.)
