I make a huge batch of this so I freeze it. I usually do cup measurements then I can grab these for lunch at work with a veggie or fruit.

Great for that leftover turkey. Adapted from Duke University Book of Diet and Fitness. I keep leftover turkey and rice in zip lock bags in my freezer to cut down on the prep time.

This is one of those "no measurements" recipes. Use about the same quantity of zucchini and yellow squash, and regardless of the size of the pot you are using figure on the pot being about 2/3 filled with veggies before the tomatoes or V-8 juice is added. I use a 5-6 quart stockpot.
