Mix together all dry ingredients in large bowl. Add shredded apples , carrots & dried cranberries. Combine beaten eggs, milk & vanilla. Pour liquid ingredients into dry & mix. Do not over mix. Fill muffin cups 3/4 full. Bake @ 350 for 15-20 minutes. Recipe Yiels 24 muffins

These muffins are satisfying enough that I was able to omit the chocolate chips from the recipe, which allowed me to use a whole egg instead of egg whites and add some oil, and still reduce the calorie count. Sometimes I add a couple of tablespoons of chopped walnuts on top before baking.

This is the basic recipe. I often replace 1/2 cup of flour with a combination of natural bran, wheat germ, and flax meal. Delicious with marmalade. I also use these to make individual strawberry shortcakes. I also sometimes reduce the milk to make a stiffer dough, roll it out and make cinnamon rolls. You can do almost anything with this recipe.

You will enjoy this nice change of pace - Calories are calculated without coarse sugar added to the top. I add sugar free jam to spice things up (or dunk them into homemade turkey chili)! Yummy!!!!!

These muffins could have a different fruit substituted easily: cranberries, other types of berries, apples, etc. The spices might just need to be adjusted!

These muffins are hearty and delicious with cream cheese! I feed them to my toddler, because they are a healthy alternative to store-bought muffins or muffin mixes, and he loves them!
