This was a stuffed pepper recipe that was to be cooked but I love just tossing the ingredients together and eating it cold. Who wants to stuff peppers when we can just chop them up instead?

Cool and refreshing - only 26 calories - no fat slushy/smoothie. This is loaded full of fruit & veggie, using cucumber, pineapple, and lemon. A cool twist of the normal yogurt drink. If you like cucumber, you will love this drink. You may add some sweetener if it is not sweet enough - although it tastes great without it.

I love this type of salad. I made it over to keep it lower calorie so it could be paired with a well-balanced dinner. I reduced the amount of bacon and significantly reduced the bacon fat from the dressing. I also added some fresh diced tomato that wasn't in the original recipe.
