Gluten-Free Banana Nut Bread

My mom was diagnosed with celiac disease about 8 years ago. We have looked everywhere for delicious recipes that substitute other products for gluten. i was fortunate to come upon this wonderful recipe, which uses only 2 unusual ingredients: GF flour and Xanthan Gum. Even though I CAN eat gluten, I still very much enjoy this delicious banana bread. It is best hot from the oven!

It is super moist, bursting with flavor, and you would never know it was GLUTEN FREE :)))

Plus, it is very low in saturated fat and high in polyunsaturated and monounsaturated fat. It is fairly low carb for a banana bread and it also has 1 gram of sugar PER slice....and they are generous servings!

My original recipe uses an apple as the base fruit. This one uses a half of a mashed banana! Yum!!

i cook muffins in mini-muffin pans, you can also use regular muffin size. If so, toss fress diced strawberries in about 1 tbsp of muffin mix. fill muffin 1/2 way then place in strawberries then fill rest of the way. Place a few strawberries on top.

Only 3.8 net carbs per muffin!!! (remember to minus the fiber to get an accurate net carbohydrate count)
These low carb banana flax bread muffins are versatile and delicious! You can omit the banana and just use banana extract to make them even more low carb! Substitute berries or apples instead of the bananas.

Each muffin has a full serving of flax - which according to my mom's doctor is good for lowering cholesterol and tha stiff soreness we get in the morning. I like it with raisins and apples, my mom adds nuts, and my dad likes to add 1 zuchini and some carrots, grated. Modify however you like.
