"Halfway Healthy" Chocolate Chip Zucchini Bread

This recipe was adapted from another, less healthy version. I substituted half healthier ingredients wherever possible. It turned out great and you don't notice the substitutions at all! If you want to make it even healthier, skip the chocolate chips and use Walnuts instead. Submitted by STRONGINTHECITY
