Leakay59's "I made that" Cookbook

I noticed a couple of my recipes were being added to other folks cookbooks. That's great! So I decided to put up all my self-created recipes in one place so they're easier to find. Enjoy!

Went looking for Brussels sprouts recipes to make for hubby for our anniversary. This combines a couple different ones. It was very good - our original 4 serving designation didn't hold - we ate them all between the two of us!

I went looking for a fairly mild recipe for an upset tummy day. This looked pretty safe, except maybe for the red pepper flakes and a whole onion, so I decided to give it a try.

***PLEASE NOTE*** if you looked at this recipe before, I have changed some things - we added more veggies, and our cooker had everything done long before the original time settings, so be aware.

We love this soup! But we make it without putting any salt in it, so I wanted to recalculate the recipe to show the difference.

This turned out very nicely. We will probably make it again soon.

this is sctaylor's recipe from the love to cook team. Hope you don't mind me plugging it in, sc. 8 servings is exactly right for this recipe. We have a 6.5 quart round crockpot, so cut it pie-shaped. I agree with the person who said the added salt was unnecessary, so I'm removing it. It is very good without it. Using no-salt added tomato products, I hope, will cut the sodium even more - I'll amend again next time I try it!

Dental problems have limited our ability to enjoy a good steak. This helps immensely! There's plenty of the vegetables left for another use, too, that's why the six serving designation

I HATE throwing food away! This recipe was the result of cleaning leftovers out of the fridge! Several Sparkrecipes will be reference, but they're out there to find.

My throat kept getting scratchier all day, and a coworker was downing her canned chicken noodle soup for lunch today for HER cold, but DH and I are trying to get a grip on sodium, and we love our veggies, so this is my recipe.

Hubby is of German extraction and I don't cook this for him often enough, but here it is, not the lowest cal recipe on the block but very good nonetheless! I use a specialty store Hungarian paprika, but the regular stuff will work too.

We needed some protein added to our day, but not too many calories, so I put this together. Hubby loved it. We put it in whole wheat pita with kale garnish.

Some of my best concoctions come from simply trying not to lose ingredients because I bought too many, or too early. This is one of those: Cook the pepper before it's too old!

If you've tried the tuna rice stuffed peppers, you'll recognize the base here! It's leftover stuffing, sauteed in olive oil till golden brown. I'm serving it with Garlic-Spiked Broccoli and Mushrooms with Rosemary.

The original recipe of this looked good, but by the time I was done with it, it seems to be enough of a different animal to repost. I would prefer to make it with fresh mushrooms, but I didn't have any. That will cut some of the sodium.

Horrors! I only had 350 calories for dinner, and nothing in the house that fit without work. So I worked! This came out pretty good. The original idea was to wrap it in lettuce leaves, but turns out what I thought was lettuce in a produce bag in the fridge, was actually green onions. So I just ate the salad. Yumm!

Game hens are on sale this week, and I ALWAYS crock on Sundays, but sparkpeople didn't have any crockpot recipes for hens. I got this one from the crockpot lady (crockpot365.blogspot.com) who, I'm sure, won't mind me sparking it for values. YummY!

All the basic recipes I looked at call for sweet relish, which I'm not overly fond of. I prefer it with dill. Obviously it would be lightened up with light or fat-free salad dressing, but even as it is, it's pretty good for the calorie price.

I adapted this from a slow cooker cookbook, to lighten it up and try to lower the sodium. The recipe calculator only offered one listing for the asparagus soup, but I'm trying to find a lower-sodium one to use. It also only listed it as prepared and it's not, so I don't know if that would change the calories at all.
